Le Grain du Vin, a vibrant and lively expression of Burgundy
An initiation in 2022 led by two passionate oenologists
The Le Grain du Vin estate , run by Mélanie and Vincent Zuber , was established with the 2022 vintage . Both trained oenologists with extensive experience in a large Burgundy house and the trading of a renowned estate , they chose to commit to a 100% living wine approach, produced without any additives and characterized by long aging , sometimes up to 18 months .
Between Chalonnais and Côte de Nuits: distinctive terroirs and sensitive winemaking
The estate is based on two distinct terroirs . Their white wine comes from vines located south of the Côte Chalonnaise , at the gateway to the Mâconnais region , cultivated biodynamically on predominantly clay-limestone soils . The grapes are aged for 18 months on their lees in 500L barrels that have already held 4 to 5 wines , which gives the wines a silky texture and aromatic depth .
The red wine , meanwhile, comes from vines over 80 years old planted in Ladoix , on reddish-brown soils mixing limestone and flint . The harvest is carried out entirely in whole bunches , without sulfuring ; after a few days of carbonic maceration , the grapes are gently crushed , then aged in 228L barrels that have held 3 to 4 wines , for 18 months , in a completely non-interventionist approach.
