Aurélien Revillot
Aurélien Révillot, the elegance of Cabernet Franc in Bourgueil
From Burgundy to the Loire, a journey towards Cabernet Franc
Aurélien Révillot is a winemaker originally from the Mâconnais (Burgundy) , trained as an agricultural engineer and oenologist at the University of Burgundy in Dijon. After several enriching experiences — notably in Burgundy ( Domaine de la Romanée-Conti ), in Oregon ( Domaine Drouhin ), in South Africa ( Newton Johnson ) and in other European vineyards — he returned to France and fell under the spell of cabernet franc and the limestone terroirs of Bourgueil .
Before launching his own project, Aurélien worked as a cultivation manager at Domaine de la Chevalerie in Bourgueil , which allowed him to know in depth the hillsides, the tuffeau soils and the epicurean spirit that characterizes this part of the Loire Valley .
A small, organic estate with great respect for living things.
He created his own Domaine Aurélien Révillot in 2012 , by leasing and operating a series of plots in Bourgueil and Saint-Nicolas-de-Bourgueil . The total area is now around 3.5 hectares , spread across a small mosaic of terroirs — including clay-limestone slopes and deeper soils — which serve to explore all the nuances of Cabernet Franc in the appellation.
The estate is certified organic and also works according to biodynamic practices; the harvest is done by hand , fermentations are carried out with indigenous yeasts , and aging is done without heavy influence of wood, often in large casks or old barrels , with very little sulfite added at the time of bottling.
Fine, precise wines, deeply rooted in their place
Aurélien's approach is meticulous and sensitive : each vineyard site yields a particular expression of Cabernet Franc, depending on the exposure, the age of the vines, and the soil type—whether it be Grand Mont , Brunetières , Les Aubuis , or Sur les Hauts . The wines are distinguished by their elegance , freshness , depth , and fine texture , always seeking a clear expression of the terroir rather than stylistic flourishes.
Today, Aurélien Révillot's wines are recognized by amateurs and professionals for their accuracy and verticality , and stand out as living examples of the authenticity that Loire Valley Cabernet Franc can offer.
