👨🏼‍🌾 Red wine made by Philippe Pacalet.

A Syrah without makeup, as close as possible to the granite rock of Cornas. Vinified in whole bunches, with gentle punching down and natural fermentation, it is aged in barrels previously used for several wines. The nose is deep, with notes of blackberry, black olive, and white pepper. On the palate, it is taut and vibrant, with a fine framework of tannins and a long, slightly smoky finish. An elegant and precise Cornas, far from caricatured power.

Figure incontournable du vin naturel bourguignon, Philippe Pacalet trace depuis des années une route singulière. Installé à Beaune, il n’est pas issu d’un domaine familial classique, mais d’une vision personnelle et radicale : vinifier en liberté, sans artifice, pour laisser parler le raisin et le lieu. Héritier de l’esprit des grands noms du vin vivant, il s’affranchit des codes, travaille à échelle humaine et signe des cuvées qui captivent autant les amateurs que les initiés.

La vigne et le vin comme un seul organisme
Pacalet travaille en micro-parcellaire, avec des raisins issus de vignes cultivées selon les principes biologiques et biodynamiques. Les vendanges sont manuelles, les raisins intacts arrivent à la cave comme une matière vivante à accompagner. Aucun intrant, pas de levurage, pas de filtration ni de collage : seules les levures indigènes guident des fermentations lentes et précises. Chaque millésime devient ainsi l’expression nue de son terroir, entre fruit, texture et énergie.

Des cuvées vibrantes, entre finesse et caractère
Philippe Pacalet se joue des frontières régionales avec ses vins : Chablis 1er Cru Beauroy 2020 et 2022, tendus, salins, aux allures de pierre humide et de zestes d’agrumes ; Monthélie, plus caressant, avec une bouche de cerise et de violette, qui garde une trame précise et aérienne ; et même Cornas 2019, qui dévoile une Syrah racée, sanguine, portée par la minéralité et la fraîcheur des granites. Chaque bouteille est une invitation à la patience et à l’émotion, signature des grands vins vivants.

Who we are?

Clara has worked in the spirits industry for many years. She has contributed to the great renown of Archibald - the French distillery tonic made near Bordeaux - and of the Folle Envie aperitif. A native of the Ile d'Oléron and the daughter of fishmongers, Clara's values include respect for fresh produce, short supply chains and a passion for nature.

Baptiste grew up on the island of Oléron. He worked for a biodynamic winery in Burgundy & discovered natural wine several years ago. Since then, he has traveled extensively in France and elsewhere to meet these passionate winemakers.

Several specifications correspond to these denominations. Here's an overview of the different organic, biodynamic and natural specifications:Organic specifications (AB label) prohibit all use of synthetic chemicals in the vineyard and cellar. It does, however, allow for a few oenological crutches during vinification. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites. In biodynamic viticulture (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He also uses biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines. Overall, the winegrower seeks to integrate vine cultivation into a global environment. Sulphites can be as low as 70 mg/L for reds and 90 mg/L for whites. In Vin Méthode Nature, the specifications specify the use of organic grapes, fermented naturally with indigenous yeasts (as in biodynamic viticulture). Natural wines receive no inputs during vinification or ageing. Only minimal doses of SO2 are permitted (30 mg/L maximum), and must be specified by the winemaker. No brutal filtration or alteration techniques are permitted. We also find the Vins SAINS designation, which aims to ban the use of sulfites altogether.
