Antoine, oenologist And specialist in microbiology has long supported winemakers with fermentations in indigenous yeasts , and this requirement is reflected here in a clear expression of the fruit and the soil. The vineyard, approximately 6 hectares , bringing together a mosaic of Loire Valley grape varieties — Chenin , black grolleau And gray , Pineau d'Aunis , Gamay petit grain , cabernet franc — often from old vines trained in cup and developed using an approach geared towards the organic and the biodynamics .
