Pierre Ségault, a fresh look at Chablis
From Maligny to Hong Kong, before the return to the vines
Originally from Maligny, a few kilometers from Chablis, Pierre Ségault grew up in a family of winegrowers, at the Domaine des Roncières. After studying wine trade, he spent several years in Hong Kong, where he worked in the import and distribution of French wines.An experience that allowed himto discover other horizons, before returning to his Burgundian roots to develop hisown winemaking project.
Chardonnay and the terroirs of Chablis
With his estate, Pierre focuses on Chardonnay, the emblematic grape variety of Chablis, and seeks to highlight the specifics of each plot. Among his first cuvées, Le Milieu des Chaumes illustrates this desire to offerChablis wines that precisely recount their origin, rather than seeking a uniform style.
Patient vinification to let the plots speak
In the cellar, Pierre favors spontaneous fermentations with nativeyeasts, without chaptalization,fining, or filtration. Maturationis done according to the cuvée in wood, amphorae, or stainless steel tanks, with time spent on lees to provide body without losingthe freshness of the Chardonnay.The idea is to let each terroirfind its own expression, with wines that retain tension, depth, and that chalky character so particular to Chablis. A new generation of winegrowers that is evolving the region's habits, whileremaining deeply attached to its lands.
