Philippe Châtillon
Domaine Philippe Chatillon, a vibrant reading of the Jurassic marls
Poligny, the beating heart of the Jura
Located in Poligny, between Arbois and Château-Chalon, Philippe Chatillon cultivates a vineyard of about 4 hectares spread between Arbois and Côtes-du-Jura, in the heart of this Jura region with its distinctive relief and contrasting climates. The vines take root in these soils typical of the region, mixing marls, clays, and limestones, which give the wines their saline tension and depth. Here, the landscape is rugged, alive, and directly imprints its signature on the juices.
A radical approach to life
Former manager of Domaine de la Pinte for nearly twenty years, Philippe Chatillon founded his own estate in 2013 with a clear idea: to pursue a committed viticulture. The work is done with a pickaxe, without herbicides or synthetic products, using biodynamic practices: horn manure, compost teas, natural preparations to nourish the soil and support the vine.
Everything is manual, precise, almost physical, with a desire to let the plant find its balance rather than constrain it.
Vinification without a safety net
In the cellar, the same logic continues: no added yeast, no fining or filtration, and gravity bottling. The wines are aged in barrels in old Jura cellars, some of which are centuries old, where time plays a central role. Some cuvées also explore more singular paths, such as aging in amphora or working under flor for Savagnins, respecting local traditions but with true freedom of interpretation.
A free, tense, and soulful signature
Philippe Chatillon's wines carry this tension specific to the Jura: chiseled, deep whites, often marked by the minerality of the marls, and delicate but vibrant reds, where local grape varieties—Poulsard, Trousseau, Pinot Noir—express themselves without embellishment.
There is a form of quiet intensity in these bottles, something alive, sometimes unpredictable, but always sincere. Wines that do not seek to smooth reality but to transmit it, in all its vibration.
