👨🏼🌾 White Wine made by Imanol Garay.

A rare cuvée dedicated to Raffiat de Moncade, an old white grape variety from Béarn that Imanol Garay is helping to bring back to life around Orthez. Made with minimal intervention, this white wine showcases the full character of this little-known variety. It opens with notes of candied lemon, white flowers, fresh pear and a delicate hint of almond. The palate is broad yet beautifully taut, with lovely salinity and a long, almost chalky finish that speaks of its origins. A distinctive, vibrant white, ideal with grilled fish, shellfish or sheep’s cheese from the Pyrenees.

Originally a sales representative for the Tonnellerie de l'Adour, Imanol explored the world of natural wine through enriching encounters, notably with Richard Leroy. This experience awakened in him a deep passion for the Earth, life, and the creation of authentic wines. Originally from San Sebastián in the Spanish Basque Country, Imanol eventually settled in the Madiran region, in Orthez. He launched his négociant business in the Southwest, sourcing grapes from both Spain and France, refusing to choose between his two homelands. Among his suppliers, he established a particularly close relationship with Jean from the Pichard estate, sharing a different vision of wine, but a mutual respect. Imanol decided to vinify Jean's grapes his own way, favoring natural and environmentally friendly methods. Throughout his encounters in the Pyrenean lands, Imanol did not only buy grapes, he also planted his own vines (2 ha) in Irouléguy and Orthez, cultivating Tannat and Raffiat de Moncade, a rare indigenous grape variety. Deeply respectful of nature, Imanol lets his vines express themselves freely. His winery in Orthez is where he passionately experiments with each vintage. The degrees of grape ripeness vary, the blends evolve, and the aging is carried out in various containers, from stainless steel tanks to stoneware jars, as well as barrels and amphorae. Imanol Garay, in addition to taking care of his vines, even soothes them with the sound of his piano notes, creating a unique environment in his winery. In summary, Imanol Garay embodies the story of a man who chose to follow his passion for natural wine, letting the land and living things guide his creativity. His quest has led him through the terroirs of the Pyrenees, giving birth to unique, vibrant wines, overflowing with personality, bearing witness to his commitment to authenticity and respect for nature.

A superb shop offering some truly beautiful natural wines that are off the beaten path. One drawback: the bottles are generally very expensive; it would be nice to expand the range to include more affordable/pleasure wines.

Several sets of specifications correspond to these designations. While sulfites are very often mentioned, rightly accused of causing headaches, many other products can be included in the composition of so-called conventional wines.
Here is an overview of the different specifications for organic, biodynamic and natural products:
The organic farming specifications (AB label) prohibit the use of any synthetic chemicals in the vineyards and winery. However, they do allow for some oenological safeguards during the winemaking process. Sulfites, for example, are permitted up to 100 mg/L for red wines and 150 mg/L for white wines.

In biodynamic winemaking (Demeter or Biodyvin certified), the winemaker not only works without synthetic chemicals but also takes the lunar calendar into account for all their operations. They also use biodynamic preparations (fermented horn manure, silica, herbal teas, etc.) to strengthen the vines. Overall, the winemaker seeks to integrate viticulture into a holistic environment. Sulfite levels can reach up to 70 mg/L for red wines and 90 mg/L for white wines.

In natural winemaking (Vin Méthode Nature label), the specifications require the use of organic grapes, fermenting naturally with indigenous yeasts (as in biodynamic winemaking). Natural wines receive no additives during the entire vinification and aging process. Only minimal doses of SO2 are permitted (30 mg/L maximum), and these must be declared by the winemaker. No harsh filtration or alteration techniques are allowed.

We are committed to offering you wines from artisan producers, from small, often family-run estates. That's why we take the time to travel across France, from vineyard to vineyard, in search of those natural wines that truly resonate with us.
We are particularly keen to introduce you to the new winemakers of tomorrow who work tirelessly to offer us magnificent wines.
