The Alsatian vineyard is full of many young and ambitious estates focused on natural wine. It is in Rosenwiller, in Bas-Rhin, that the adventure of the Einhart family estate begins. Coming from a family of winegrowers, Nicolas Einhart joined the family estate in 1990. In 1997 he was one of the founding members of the TIFLO association whose main commitments are the maintenance of ecological refuge zones and the refusal of the most harmful phytosanitary products. . It was therefore quite natural that Nicolas decided to convert his vineyard to organic farming in 2008 with the first production of certified grapes in 2011. The balance of biodiversity and respect for the terroir are at the center of his concerns. Théo, his son, is now taking up the torch, with a vision very focused on natural wine and maceration white wines, he decides to radically change the way of winemaking at Domaine Einhart. The objective always remains to produce healthy, balanced grapes, best reflecting the clay-limestone terroir of Rosenwiller. It is with this high quality raw material that Théo will subsequently be able to produce natural wines. The harvest is entirely done by hand, early and only in the morning for maximum freshness. The berries are then macerated for several days. As is often the case in natural wine, the only interventions that Théo allows himself consist of drawing down, pumping up, aerating... no brutal intervention, but on the contrary know-how. If he vinifies terroir by terroir, Théo does not then stop himself from assembling, re-composing and recreating balances in his natural wines. Overall, he seeks to produce lively, powerful and expressive wines, reflections of the Rosenwiller terroir. An unmissable from Domaine Einhart: Muscana, a maceration of Muscat from Alsace.
